Santa Fe Soup Recipe


My mom gave me this recipe years ago and it is my all time favorite soup! Here is the Recipe:
- 2 pounds hamburger meat
-1 Large Onion (Diced)
-2 envelopes of ranch dressing mix
-2 envelopes of taco seasoning mix
-2 cans (11oz) of white shoepeg corn, drained
-2 cups of water
-1 can black bean
-1 can pinto beans
-1 can red beans or chili hot beans
-1 can diced tomatoes
-1 can Rotel (or a can of diced tomatoes with chilies)
Optional:
-Sour Cream
-Chedder Cheese
-Green onions
-Cornbread
-Tortilla chips

-Cook the hamburger mean and diced onion in a skillet on the stove top until the meat is brown and onions tender. (Drain if excess grease)

-If you are cooking in a crock pot (which I always do) Then add all the ingredients (except the optional ingredients) into the crock pot and cook on high for 4 to 6 hours or low 8 to 10 hours.

-If cooking on stove top: Add remaining ingredients (except the optional ingredients) to the meat and onions. Mix well. Bring to a boil. Reduce heat. Cover and simmer 2 hours.

-Top individual servings with with grated cheese, sour cream and chopped green onion.
Serve with Tortilla chips or cornbread. (Makes 3 Quarts) ENJOY!
