Breakfast this morning

I've been making pancakes for me and the girls for breakfast lately.  I say "me and the girls" because Q leaves too early (okay, only 7:30) but honestly he would rather have the whole shebang with eggs, biscuits, gravy, sausage, and you get the point.  Who can blame him? And maybe just one day I'll be a really good housewife and wake up early every morning and make these things for him... Oh, I KNOW, maybe in the next year when I'm up early with our newborn baby! ha!  Who am I kidding?

  So, this morning I decided to mix things  up a little and add chocolate chips to the pancake mix.  Journey was still asleep.  Q was about to walk out the door for work.  I was mixing the pancake mix and Deci was sitting on the counter reading me bible stories.  Here is how our conversation goes.

Deci:  "Moma, do you know how to make doughnuts?"

Me:  "Nope."

Deci: "Well, maybe when me and Journey grow up you can get a grown-up job and learn how to make doughnuts for me and Journey."

Me: "Why do you want me to make doughnuts?"

Deci:  "Because they are good and if me and Journey are grownups then you can leave us here and go to work to make doughnuts and then bring us back some after work."

And I thought I was being the cool Mom by adding chocolate chips to the pancake mix!  That settles it then, when I go back to work, I'll work at a doughnut shop and everyone will be happy! :)

Neighbors

A few weeks ago I asked Q to go to Wendy's to get us something to eat.  When he left he saw a group of neighborhood kids who had just moved in a house down the road from ours.  So he bought 8 Frosty's for them. (I might add here that he forgot to give them the spoons.  Breanna later wondered why our bag had 8 spoons in it. haha! Whoops!) Q and I left for date night right after this and as we were driving down the street past their house they were waving like crazy at us. :)

A week later I heard someone knock at the door.  It was a young boy from that house bringing us cookies that his Aunt made.  He said it was because "some man bought us frosty's last week." haha!

I loved living in that neighborhood...I LOVE getting to know neighbors.

I have still not met any of our neighbors around our new house but today as I was pulling out of the driveway to go to church the lady that lives beside us was out smiling and waving at us as we pulled away.  Maybe I'll bake her some cookies this week. :)

Weight Watchers: Mini Chocolate-Chip Cookies

I found this Weight Watchers recipe online for chocolate-chip cookies. 1point each!  Here is what you will need:

	2 Tbsp salted butter, softened
	2 tsp canola oil
	1/2 cup(s) packed brown sugar, dark-variety
	1 tsp vanilla extract
	1/8 tsp table salt
	1 large egg white(s)
	3/4 cup(s) all-purpose flour
	1/4 tsp baking soda
	3 oz semi-sweet chocolate chips, about 1/2 cup

Instructions

• Preheat oven to 375ºF.
• In a medium bowl, cream together butter, oil and sugar. Add vanilla, salt and egg white; mix thoroughly to combine.
• In a small bowl, mix together flour and baking soda; stir into batter. Add chocolate chips to batter; stir to distribute evenly throughout.
• Drop 48 half-teaspoons of dough onto one or two large nonstick baking sheets, leaving a small amount of space between each cookie. Bake cookies until golden around edges, about 4 to 6 minutes; cool on a wire rack. Yields 1 cookie per serving. 

I'm pretty sure I made my cookies a little larger than what the recipe called for. :) These were really yummy! Especially for 1 point Weight Watchers cookies but they are a little fluffy...kind of like pancakes...or something... I'm not quite the perfect baker so it could have been something I did wrong. Ha! :)  I hope you ENJOY!

Baking Cookies with Dee

Saturday Deci and my mom "Dee" made Cookies! 

Side story: My mom wanted to be called Gram but when Deci was little she said a D sound instead of the Gr sound... put it together and you get Dam... not quite a lovely name for a grandmother huh? So  her name got shortened to Dee. :)

 This is her "secret" recipe so I can't share it with you but here's a hint of what goes in them...

 Ha! Have you figured it out yet?? Yeah, me neither. I watched them make the cookies and I still don't know how to make them.

 Deci loved making these and I loved eating them! :)
